Bugava

A white indigenous variety characteristic of the island of Vis. It is a historically famous and well-known variety, a sleeping beauty that deserves full attention. Anyone who tastes this wine will quickly understand its potential.

Color: sunny yellow with golden sheen.

Aroma: an extremely complex smell characteristic of vugava, fruity aromas of stone fruits such as peach and ripe apricot, which transition into a slightly smoky spicy note of Mediterranean herbs and thyme.

Taste: medium-strong, nicely rounded body with balanced alcohol that follows the structure of the wine and with a soft and elegant freshness that is the result of a carefully chosen harvest period, and retains the fresher tone of this variety. The aromatic profile is initially pear-like, while opening the wine in the glass releases aromas of lemon blossom. In the mouth, the vugava is elegant and seductive, with discreet notes of floral honey, convincing and persistent.

An ideal wine to accompany Vis specialties such as : fried fish, boiled fish, seafood risotto, raw urchin and limpet, fava beans and artichoke, octopus and potato salad, fish stew, fish and potato stew, barley with cuttlefish, wild asparagus and prosciutto frittata, semi-mature sheep and goat cheese with fresh figs and grapes.

Still wines production

In the vineyard the parameters of total acids, sugars and pH are monitored and at an optimal time the grapes are hand-harvested. Part of the grapes is separated during the processing for a short cold maceration (2 – 4 hours at 10℃) while the larger part is taken to fast processing. The grapes are pressed up to mid-range values (max. 1 bar), after which it leaves for pre-clarification which lasts 24 – 36 hours at a temperature of 12℃. After this it is decanted (the removal of the must from the solids). After decanting the fermentation process begins under a controlled temperature of 12 – 18℃. At the end of fermentation part of the wine spins on the fine solids (sur-lie) for 40 days while the rest goes to maturation in inox tanks

At Bugava Antique, grapes were cryomacerized for 4 – 5 hours for additional aroma extraction.

Malolactic fermentation

Wine that matures in inox tanks is prevented by malolactic fermentation to preserve the malic acid that carries the freshness of the wine, while the part of the wine that goes to sur-lie is inoculated with malolactic bacteria that break down malic acid, but not citric acid, which achieves a higher creaminess of the wines with partially preserved freshness.

Maturation

It ages in stainless steel tanks for at least 100 days, and then in bottles for the same amount of time. Part of Bugava Antique is aged for several months in wooden barrels.

An ideal wine to accompany Vis specialties such as:

fried fish, boiled fish, seafood risotto, raw sea urchins and clams, broad beans and artichokes, octopus and potato salads, brudeto, gregada, orza (barley) with cuttlefish, frittata with wild asparagus and prosciutto, medium-ripened sheep’s and goat’s cheeses with fresh figs and grapes.
